Baked Salmon with Miso Sauce
Ingredients

1 lb Wild Salmon Fillet

1 T Dijon Mustard

1 T Stone Ground Mustard

2 T Agave Nectar or Local Honey
-
2 T Brown Rice Miso

Juice of One Lemon
Directions

Preheat oven to 450 F.

Combine the sauce ingredients in a small bowl and whisk until smooth.

Place the salmon fillet in a baking dish and coat with the sauce. Spread the coating evenly over the fish with a spoon or brush.

Bake the salmon for 15-18 minutes, uncovered, until cooked through and flaky. The glaze should be golden brown on top.

Delicious with sautéed greens in garlic and cooked quinoa or brown rice.

Note: The natural sweetness of agave nectar or local honey combines well with the pungent miso and mustard for a sauce which seals the salmon and helps retain all the natural juices while baking.

Hint: Taste the sauce and add more mustard, agave nectar or honey and miso, depending on how you want the pungent, sweet or saltiness to balance.
