Baked Salmon with Miso Sauce

Ingredients

  • 1 lb Wild Salmon Fillet

  • 1 T Dijon Mustard

  • 1 T Stone Ground Mustard

  • 2 T Agave Nectar or Local Honey

  • 2 T Brown Rice Miso

  • Juice of One Lemon

Directions

  • Preheat oven to 450 F.

  • Combine the sauce ingredients in a small bowl and whisk until smooth. 

  • Place the salmon fillet in a baking dish and coat with the sauce.  Spread the coating evenly over the fish with a spoon or brush. 

  • Bake the salmon for 15-18 minutes, uncovered, until cooked through and flaky.  The glaze should be golden brown on top.

  • Delicious with sautéed greens in garlic and cooked quinoa or brown rice.

  • Note: The natural sweetness of agave nectar or local honey combines well with the pungent miso and mustard for a sauce which seals the salmon and helps retain all the natural juices while baking.

  • Hint: Taste the sauce and add more mustard, agave nectar or honey and miso, depending on how you want the pungent, sweet or saltiness to balance.
