Vintage Beef & Bean Chili

Ingredients

  • 1 lb Vintage Ground Beef

  • 3 cans Beans (pinto, red, kidney, black)

  • 1 28oz can Organic Fire-Roasted Tomatoes

  • 1 – 2 T Extra Virgin Olive Oil

  • 1 medium Yellow Onion, peeled & diced

  • 3 Carrots, thinly sliced

  • 3 Celery, thinly sliced

  • 3 Garlic Cloves, peeled & minced

  • 2 t Cumin

  • 1 t Oregano

  • 1 t Chili Powder

  • 1 t Sea Salt

  • Black Pepper to taste

Directions

  • In a large soup pot, brown the ground beef.  Drain any extra fat.  Add in the onion, carrots, celery, garlic and spices and sauté for 3 – 5 minutes in olive oil on medium heat, until vegetables are soft.  Add in the beans with the liquid and can of tomatoes.  Cover and cook for 20 minutes.

  • Serve hot and top with fresh, chopped cilantro, sliced avocado, sliced black olives, your favorite shredded, organic or local cheddar cheese or organic sour cream.
