Vintage Beef & Bean Chili
Ingredients

1 lb Vintage Ground Beef

3 cans Beans (pinto, red, kidney, black)

1 28oz can Organic Fire-Roasted Tomatoes

1 – 2 T Extra Virgin Olive Oil

1 medium Yellow Onion, peeled & diced

3 Carrots, thinly sliced
-
3 Celery, thinly sliced
-
3 Garlic Cloves, peeled & minced
-
2 t Cumin
-
1 t Oregano
-
1 t Chili Powder
-
1 t Sea Salt
-
Black Pepper to taste
Directions

In a large soup pot, brown the ground beef. Drain any extra fat. Add in the onion, carrots, celery, garlic and spices and sauté for 3 – 5 minutes in olive oil on medium heat, until vegetables are soft. Add in the beans with the liquid and can of tomatoes. Cover and cook for 20 minutes.

Serve hot and top with fresh, chopped cilantro, sliced avocado, sliced black olives, your favorite shredded, organic or local cheddar cheese or organic sour cream.
