Butternut Squash & Apple Skewers with Nut Butter Sauce
Ingredients

1 medium Butternut Squash (don’t peel if using organic)

3-4 Gala Apples

1/2 Lemon, juiced

3 t Cinnamon
-
2 t Nutmeg
-
2 T Coconut Oil, melted
-
2 T Maple Syrup
-
2 T Almond or Cashew Butter
-
8-10 Wooden Skewers, soaked in water for 15 minutes
Directions

Preheat oven to 375 degrees.

Dice butternut squash into about 3/4 inch cubes.

Mix together the spices, oil, nut butter, lemon juice and maple syrup. Add a bit of water if too thick, should be like a thick dressing.

In a bowl, pour 2/3 of the mixture over squash & toss, covering all the pieces evenly.

Place on a baking sheet & in the oven for 20 minutes.

Chop apples into similar size pieces. Mix apple with lemon juice & then toss with remaining nut butter mixture.

Remove squash from oven, allow to cool for a few minutes & then put alternating apple & squash pieces on skewers. Put back into the oven & bake for 15 minutes or until both are soft.

Note: You can make extra nut butter sauce to put into a small bowl for dipping – then serve with the cooked squash and apple skewers!
